My favorite way to use hard hard eggs

I have a lot of hard eggs to do after Easter every year. This recipe for fresh and easy egg salad is my favorite way to use them!

And so it starts: my egg salad gives a kick.

Each year after Easter, I make this egg salad recipe to use hard hard eggs left from the celebration of my family. This first batch of egg salad reminds me how fresh, bright and tasty, and I end up repeating it for lunch throughout spring.

The funny part of all this is that just a few years ago, I thought I did not like the egg salad. I brought him back because he fell in my least favorite – Mushy food category. I also had some unhappy memories of coffee versions which were too creamy and bland.

But when life gives you hard eggs, what else do you do? A year after Easter, with a refrigerator full of hard eggs to eat, I decided to give an egg salad another blow. But not just any egg salad – Salad of tenders My way.

I cut the eggs, but I did not crush them, so that the salad still had a texture. I added the red onion for the crunch and the fresh lemon juice and the Dijon mustard for a shiny and tart flavor. More importantly, I loaded it with tasty herbs and mixed with a few capers for a salted and Saum depth.

I was wrong. Egg salad, bland? This recipe is anything but.

Do you want to make this recipe? Here are some tips:

  • Cool it before serving. I will not lie – this salad is quite tasty directly from the bowl, just after mixing it. But it goes even better after about 20 minutes in the refrigerator. If you have time, cool it before serving to give the flavors a chance to merge.
  • Additional modules do so. Do not skimp on fresh herbs! They add the freshness, lightness and complexity that make this salad of eggs above the rest. I also love capers in this recipe, but you could easily replace them with diced dill pickups or a relish – everything to give the salad an additional pop.
  • You don’t have to serve it on a sandwich. I also love this recipe with crackers or greens! The three ways are ideal for lunch.
