A light and tasty chicken salad in a fresh and creamy tzatziki sauce!

ingredients
    For the Tzatziki sauce:
  • 1/2 Cup of Greek Nature
  • 1/2 cup of cucumber, peeled, sown, grated and pressed to drain
  • 2 cloves of garlic, grated
  • 2 tablespoons of fresh, chopped dill
  • 2 tablespoons of fresh, chopped parsley
  • 2 tablespoons of lemon juice (~ 1/2 lemon)
  • 1 teaspoon of lemon zest (optional)
  • salt to taste
  • For the chicken salad:
  • 4 cups of chicken, cooked and shredded or chopped
  • 1 cucumber cup, dice
  • 1/2 cup of celery, in dice
  • 1/4 cup of red onion, dice
  • 1/4 cup of feta, crumbled (optional)
instructions
    For the Tzatziki sauce:
  1. Mix everything well.
  2. For the chicken salad:
  3. Mix everything, including the tzatziki sauce.

Option: Replace 1/4 cup of Greek yogurt with 1/4 cup of mayonnaise.
Option: Add 1 cup of tomato, diced.
Option: Add 1/4 cup of Kalamata olives, trenches
Option: Add 2 tablespoons of mint, chopped.
Option: Replace the red onions with green onions.
