3 slices of cucumberabout 1/4 thick thickness more one for the garnish

1/2 ounce costs 1 lime juice

1/2 ounce simple syrup (see note)

1 1/2 ounces Ginlike Hendrick

1 to 2 ounces Eau de Seltzer

In a cocktail shaker, confuse the cucumber slices with the lime juice and the simple syrup until the cucumber is completely dissolved.

Fill the ice cocktail shaker, add the gin and shake for about 10 seconds. Pour the cocktail through a mini colander in a collins glass filled with ice. Garnish with Seltzer water and garnish with a slice of cucumber.

Notes
To make simple syrup, mix 1 cup of water with 1 cup of sugar in a small saucepan and heat over medium heat, stirring constantly, until the sugar is dissolved. Cool before using.
Make-ahead and storage
Simple syrup will remain in a container sealed in the refrigerator up to 5 days.
