Spicy summer miso soup

The other day, I was going through my notebook and I stopped on a Miso Show-Stopper soup that I like. This is something that I cook several times every year. Frankly, I am surprised that it took so long to share the recipe, but we are there! The foundation of this soup is the broth. It is a * punch * of flavor built on the garlic, ginger, green onions, toasted sesame oil, miso and fermented chili paste. The broth is made creamy with a baked spoonful of Bon Tahini. Build the soup from there, I always add waxy potato cubes and a lot of chopped green cabbage. Everything is finished with tofu cubes and a blitz of everything that is summer. Cherry tomatoes are cut in croissants, young yellow beans, soft corn and Slived basil are all a fair game. Those of you with gardens – raids.

The broth here is a riff on the Miso Hot Sesame broth in Naoko Takei Moore and the book Donabe by Kyle Connaughton. This broth was “inspired by the Japanese ramen dish So many menwho is derived from the Chinese And and meOr and and Noodles. “You see it in the book served in hot style with chicken meat.
Let’s talk spicy – What is Tobanjan?
Tobanjan is the spicy component here. It is a fiery, salty and fermented bean paste that has become essential in my kitchen for its nuanced and diaper heat – Love here deep. I buy 3-4 small pots (above) at a time when I visit Tokyo Central in the County of Orange, in California. You can also find it online – this is the Naoko Stocks brand in its shop, Toiro Kitchen. Where I spend all my money on Donabe – laughs / cry. Exchange in another spicy paste or sauce if you don’t want to descend the Tobanjan rabbit burrow – the soup will be different, but always delicious.
As the seasons progress, you can, of course, adapt with other ingredients. This is the great thing here, a version of mushrooms is super later in the year. You can add winter squash with potatoes, radicchio, etc. And in spring asparagus, Fava beans, spring onions and spring peas make an entirely different version. Have fun with it.
