Why it works

In a hot kitchen, you cannot just throw fresh lime, tequila, cointreau and simple syrup in a mixer with ice: while you turn it, the liquid at room temperature melts the ice, so you get a fresh Margarita, but not frozen in the brain.

The secret of real Slushie style margaritas at home (as opposed to the classic Margarita on the rocks), without using corn syrup or artificial flavors, is to make your Margarita base the day before and keep it in a container sealed in your freezer. The mixture will not freeze because there is so much alcohol and sugar, but it will drop in temperature: ours is recorded at 5 ° F (-15 ° C) after a night. When the party starts, throw your ice in the mixer, add your super cold homemade Margarita mixture, get it on your head on “Ice Crush” and you are ready to go. The result will be soft, watered and completely refreshing.

  • 4 ounces (1/2 cup; 120 ml)) Silver tequila (100% agave)

  • 2 ounces (1/4 cup; 60 ml) triple of high dry quality, as Cointeau

  • 2 1/2 ounces (5 tablespoons; 75 ml)) lime juiceSince 4 to 5 limes

  • 4 ounces (5 tablespoons; 75 ml)) simple syrup (see note)

  • 12 ounces ice (about 3 cups))

  1. At least 8 hours before serving: Mix the tequila, the triple dry, the lime juice and the simple syrup in a sealing container that will hold in your freezer. Seal and place in the freezer for at least 8 hours and up to 1 week (the mixture will remain completely liquid).

  2. When you are ready to serve, add a mixture of ice and tequila to the mixer. Mix on a highest adjustment, pulse and scrape the sides if necessary, until it is completely smooth. Serve immediately.

Notes

For best results, cool the basis of Margaritas at least eight hours before mixing. The basic mixture can be doubled before it is placed in the freezer, but you will have to work in two separate lots during the mixture. To make simple syrup, mix equal volumes of sugar and water in a small saucepan and heat until the sugar is dissolved.
