Easy Gluten-Free Monster Cookies (Vegan, Flourless!)

Monster Cookies have progressed! Say hello to our healthier version of the soft, chewy, peanut butter, chocolate, and candy cookie you know and love. Our version has all decadence and delight, but it’s vegan, gluten free, without flour, without oilAnd sweetened with maple (magic, we know)!

Even better? These cookies are child’s play to make! You will just need 1 bowl, 9 ingredientsand approximately 20 minutes until it’s cookie time. Let’s cook, friends!

What are monster cookies?

Do they look like monsters? Do they taste like monsters? Or do they transform you In a monster? The origin story of these classic cookies loaded with chocolate, oats, peanut butter, and M&Ms is a bit of a mystery! Some say monster cookies get their name from their large size. Others claim it’s because of their bumpy texture and bright colors or because all the great ingredients make them the “monster” of all cookies.

We vote for the latter! Come on. Melting chocolate, soft oatmeal, peanut butter And M&Ms – how can something with all these ingredients not be the best Never?! These ingredients are pretty standard in all monster cookie recipes. Recipes typically vary on whether they contain flour or only oats, as well as types of sugar, eggs, and proportions of ingredients.

Our version? Without flour! Lots of oats! Vegan, gluten free, oil/butter free, naturally sweetened, nothing artificial. Monster cookies for everyone (and no one turns into a monster 😉)!

How to make gluten-free monster cookies

Aren’t monster cookies already gluten-free? Not quite! Those that contain all-purpose flour are not gluten-free. But versions made with all oats (without flour) are generally gluten-free provided you use certified gluten-free oats and avoid crisp M&Ms (which contain barley malt extract). If you can’t eat oats, you will unfortunately have to skip this recipe, but you can find all our oat-free treats here!

We opted for an all-oat version (without flour) for several reasons: an easy, healthy, and pleasantly chewy texture, and when cooked, it almost tastes like oats. are flour (magic!). The other classic cookie omitted from this recipe? Butter! Instead, we use extra peanut butter, which keeps them vegan and gives those mega peanut flavors + more fiber and simplifies the ingredient list.

Speaking of the other ingredients, they are super simple: maple syrup, vanilla, baking powder + soda and salt. Mix them all together, then add the classic monster cookies (oatmeal, chocolate and “M&Ms”).

Stick to one more healthy cookie atmosphere, we opted for a natural alternative to M&M which is dyed with beet juice and spirulina and prepared with better-for-you ingredients. Feel free to use whatever M&Ms you prefer, ensuring gluten-free for GF eaters.

At the end of everything (just 22 minutes!), you will have minimally dirty dishes (this is a 1 bowl mixing situation) and the result is SO worth it! Happy cookie eating!

  • 1 cup natural creamy peanut butter (peanuts and salt as the only ingredients // see our peanut butter review here)
  • 2/3 cup maple syrup*
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea ​​salt
  • 2 cups oatmeal (use certified gluten-free oats if needed)
  • 1/2 cup natural colored candy coated chocolate (and more for topping // make sure you’re vegan/gluten-free if necessary // we love Dark Chocolate Peanut Gems and Dark Chocolate Crispy Quinoa Gems from Unreal Snacks)
  • 1/2 cup mini semi-sweet chocolate chips (be sure to be dairy free if necessary // we love Enjoy Life)
  • Preheat your oven to 350 degrees F (176 C) and line two baking sheets with parchment paper (or use nonstick or lightly greased baking sheets). Cancel.

  • In a large mixing bowl, add the peanut butter, maple syrup, vanilla extract, baking powder, baking soda, and sea salt. Mix well to combine.

  • Then add the oats, candy coated chocolate and mini chocolate chips. Stir until candy is evenly distributed.

  • Use a medium cookie scoop (or spoon) to scoop out approximately 1 ½ tablespoon portions of dough and place them on the baking sheet. Press with the palm of your hand to slightly flatten the dough; it may stick a little to your hands (this is normal!). Top with additional candies (~1-2 per cookie).
  • Bake for 11-13 minutes until lightly browned. Let cool slightly before serving. Let cool completely before storing leftover cookies in an airtight container for up to 2-3 days. Cookie dough can also be scooped, slightly flattened and frozen (layered between parchment paper to prevent sticking), then baked for an additional 1 to 2 minutes after freezing.

*We also tested a version with brown sugar but preferred the maple syrup version. The brown sugar made the cookies denser and their flavor healthier. If you want to use brown sugar, we suggest making it into a syrup to replace the maple syrup.
