The glycemic index (GI) is a means of assessing carbohydrates according to their effect on blood sugar. Foods with higher GI increase blood sugar levels to higher levels faster and longer.
Quinoa is considered a low GI food, while white rice is a high GI food. When you look at GI, it is important to understand that it does not take into account the following:
- The glycemic index of other foods in the meal
- How the food is prepared
- How much food eating
- An individual’s response to carbohydrate sources
