Pesto chicken – cupboard kitchen

Pesto chicken

Chicken filled with pesto with fresh basil and cheese that is cooked until the chicken is cooked and the cheese is melted before garnishing with a fresh tomato garnish!
ingredients
- 1 Book of boneless skinless chicken breasts (or thighs)
- salt and pepper to taste
- 1/2 Basil pesto cup (link)
- 2 cups of mozzarella cheese, shredded
- 1/4 cup of amonggiano Reggiano (Parmesan cheese), grated
- 2 cups of bruschetta tomato (see below) (optional)

- Place the chicken in a cooking dish and season with salt and pepper to taste.
- Spread the pesto in the basil on the chicken before sprinkling on the cheeses.
- Cook in a preheated oven 350F / 180C until the chicken is cooked (165F), about 25 to 35 minutes, before sprinkling on the basil and enjoying it!
Note: The cooking time will depend on the size of the chicken breasts; If you use large chicken breasts, it can take longer; Use a meat thermometer to make sure the chicken reaches 165F. If the garnish seems to become too dark, cover with aluminum foil.
Option: Add 1/2 teaspoon of onion powder with salt and pepper.
Option: Add 1/2 teaspoon of red pepper flakes with salt and pepper.
Option: Add 8 ounces of cream cheese, room temperature; Spread on the chicken before garnishing the pesto.



Tomato bruschetta

Fresh tomatoes mixed with garlic, onions, olive oil, balsamic vinegar and basil!
ingredients
- 2 cups of tomatoes, seeds and diced
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of balsamic vinegar
- 3 cloves of garlic, chopped / grated
- 2 tablespoons of red onion, finely in dice
- 2 tablespoons of basil, in thin slices
- salt and pepper to taste
instructions
- Mix everything well and possibly let it sit for an hour before enjoying it!
