Easy grated chicken recipe
Weekly evenings in my house can sometimes be a race (not funny breakfast). This is why I like to use my slow cooker to make a big batch of grated chicken for my family. I can throw everything and have a juicy and tasty chicken which is essentially ready to go there in a few hours. This is the kind of recipe that makes the preparation of meals achievable, even when life is chaotic.
I’m going to fix it for lunches, throw it into quesadillas or stir it in a quick pasta dish when I am too tired to think. A lot of grated chicken with endless options? This is the kind of shortcut of dinner that helps maintain the proper functioning of my week!
The chicken breast works very well in this recipe because it shouts beautifully after slow cooking. He always comes out tender, juicy and easy to separate with two forks. That said, you can use boneless and skinless chicken thighs if that’s what you have at hand! They will just have a slightly different texture because the chicken thighs are higher in fat compared to the chicken breast, which is leaner.
The frozen chicken breasts will also work, but make sure that it is fully deflected in the refrigerator. Cooking the frozen chicken in a simmer is not recommended, as it can take too long to reach a safe temperature.

How to take photos step by step of shredded chicken

Gather all your ingredients.

Season the chicken: Drizzle the chicken breasts from 3.5 to 4 lb with 1 tablespoon of olive oil, then rub them with the salt of 1 teaspoon, 1 teaspoon of black pepper, 1 teaspoon of onion powder and 1 teaspoon of garlic powder.

Cook the chicken: Place the seasoned chicken in your simmer and pour more than 2 cups of chicken broth. Now cook in your slow cooker for 4 hours.

Shred the chicken: Remove the slow cooked chicken from your simmer and place it in a bowl. Use two forks to shred the chicken.

Add broth (optional): If you wish, you can place part of the chicken broth of the slow cooker on your tried chicken. This can help keep it moist during storage, but I find it soaking it in as much liquid after cooking can make the chicken pasty. However, you should absolutely freeze the chicken broth for future recipes!

Serve: You can either serve your grated chicken warm in the simmer, or let it cool and add it to the salads. You can use it as you wish, and it’s absolutely perfect for the preparation of meals!

- Your chicken is ready when it is tense and cooked. For me, it was after 4 hours above in the slow cooker. If you want to return, the internal temperature of your chicken must also be 165 ° F.
- Set the chicken while it is still hot. The texture is softer and easier to separate as warm. Avoid letting it cool completely, or it can become more difficult to shred.
- Do you have a stand mixer? Exhale the hot chicken (not shredded) in the bowl with the paddle and mix with baseness for about 20 seconds. He shouts like a dream and save your wrists!

Storage and reheating
Keep the remains in an airtight container in the refrigerator up to 3-4 days. You can serve this grated simmer chicken on salads, or warm it in the microwave or on the stove. I like to add a touch of reserved chicken broth while warming up to prevent it from drying. You can also freeze grated chicken and broth (store them separately) up to 3 months. Just let the chicken defrost in the refrigerator before reheating.
