Musked squash Alfredo pasta – Cupboard kitchen

Alfredo musk squash pasta

Pasta in a creamy parmesan sauce with a mash roasted musk!

ingredients
  • 3 cups of musk squash, peeled, seeds and cubes
  • 1 tablespoon of olive oil
  • salt and pepper to taste
  • 1 cup of chicken broth (link) (or vegetable or cream broth)
  • 8 ounces pasta (gluten -free for gluten -free)
  • 4 tablespoons of butter
  • 4 garlic cloves, chopped
  • 1 tablespoon of sage, chopped
  • 1 cup of thick cream
  • 1/2 cup of amonggiano Reggiano (Parmesan cheese), grated
  • 1 pinch of nutmeg (optional)
  • salt and pepper to taste
instructions
  1. Mix the musk squash in the oil, with salt and pepper to taste and organize in a single layer on a mold.
  2. Road in an oven preheated 400F / 200C to the tender musk squash, about 20-30 minutes, mixing halfway.
  3. Puree the musk squash with the broth in a food processor or a mixer
  4. Meanwhile, start cooking pasta as indicated on the packaging.
  5. Meanwhile, melt the butter in a large skillet over medium heat.
  6. Add the garlic and sage and cook until they are flavored, about a minute.
  7. Add the cream, bring to a boil, reduce the heat and simmer for a few minutes.
  8. Add the cheese, mix and let melt in the sauce.
  9. Mix pure musk squash and nutmeg before seasoning salt and pepper with taste.
  10. Mix the cooked pasta in the sauce, possibly adding the reserved pasta cooking water to bring the sauce to a good consistency.

Option: Roasted head of garlic with the musk squash.
