Why it works
- A combination of club soda and prosecco adds acidity, yeast notes and additional effervescence to this refreshing aperitif.
- The olive garnish adds a Saumur and Salt counterpoint to the Campari Sweet Notes.
In SpeakeasyJason Kosmas and Dushan Zaric of employees only say that Campari Spriz is the predecessor of the popular Aperol Spriz: “While the Aperol version is soft, the Campari version is daring and assertive.” It is served with an olive green, which is a surprisingly delicious partner for the tangy and slightly bitter cocktail. Consider serving them with propagation before dinner that includes cheeses, cold meats, olives and pickles.

2 ounces Prosecco or other sparkling wine

1 ounce soda club

2 ounces Cargo

1 big Green OliveOr 3 little olives On a choice, to garnish

Fill the glass with ice rocks. Add sparkling wine, club soda and campair. Stir gently. Garnish with olives.
