Mexican style stove chicken and zucchini

Chicken and vegetable flour seasoned with tacos that are easy to fry with a lot of melted cheese!
ingredients
- 2 tablespoons of oil
- 1 book breasts or boneless and skinless chicken, cut into pieces of the size of a bite
- 2 zucchini, dice
- 1 onion, in dice
- 2 peppers (any color), dice
- 3 cloves of garlic, chopped
- 2 tablespoons of Taco seasoning (link) (or a package)
- 1 (15 ounce) can beans black, rinsed and drained
- 1 (15 ounce) can dice (or 2 cups of salsa)
- 1 cup of corn (fresh or frozen)
- 1 cup of cheese (like cheddar, monterey jack, etc.), shredded
- 2 green onions, trenches (optional)
- 2 tablespoons of coriander, chopped (optional)
instructions
- Heat the oil in a large skillet over medium-high heat, add the chicken and cook, about 8 to 10 minutes, before putting aside.
- Add the zucchini and cook until tender, about 7 to 8 minutes, before putting aside.
- Add the onion and peppers and cook until it is just tender, about 5-6 minutes.
- Add the garlic and taco seasoning, mix and cook until they are flavored, about a minute.
- Add the chicken, zucchini, beans and tomatoes, bring to a boil, reduce the heat and cook for 5 minutes.
- Mix the corn.
- Sprinkle on the cheese, cover and let melt.
- Garnish green onions and coriander and enjoy it!
Option: Serve fitted with your favorite taco style garnish such as sure cream, guacamole, cheese, etc.
