These crispy tomato fritters have a taste for summer on a Greek island

Meet ntototokeftetes: Greek tomato fritters

One of my favorite Greek donuts is ντοματοκεφτέδες, written as ntomatokeftedes (tomato donuts) in English. NTOMATOKEFTEDES, also spelled TOMATOKEFTEDES, is one of the most emblematic vegetable donuts in Greece, a beloved specialty from Santorini. The dry climate of the island and the volcanic soil cause tomatoes with a concentrated flavor and a minimum water content, perfect for donuts. You will also find versions in many Greek islands, especially in the neighboring cycladic islands and on the Greek continent.

The term keftedes is often associated with meatballs. However, in Greek, it also refers to a very small fried tour – whether it be made from zucchini (KolokithokeFtedes), chickpeas (RevithokeFtedes), or, as in this case, tomatoes.

The best tomatoes for Greek tomato donuts

One of the joys of this recipe is its flexibility. Do you have deadly market tomatoes? Some languid sub-prime on the counter? Use them. Most juicy tomatoes may require additional flour, while the firmest need less. And although these are better made in summer with ripe fruits, they forgive enough to satisfy the desires of tomatoes off season too.

A donut built on juicy tomatoes

Unlike many donuts, such as zucchini fritters, which require the removal of the moisture of the main vegetable to reach the sharpness, tomato donuts embrace their ingredient juicy stars. This recipe balances the natural humidity of the tomato with flour, eggs, herbs and brackish feta to create a spoonful paste which is directly in hot oil – no difficult shaping.

The texture of the dough is the key. It should be somewhere between the loose tuna salad and a thick scoopable dip like tzatziki. If, after the mixture, the dough feels too loose – often the case with more juicy and ripe tomatoes – Azé a tablespoon of flour both until it holds its shape without becoming steep or pasty. I like to use a mixture of chopped and grated tomatoes in my donuts. The minced tomatoes create bursts of flavors and red spots lively on the surface, while the grated tomato gives the donuts a uniform shade and burned by the sun and a lush tomato flavor everywhere.

  • 12 ounces tomatoes (340 g; about 3 AVERAGE tomatoes), split

  • 1/2 AVERAGE YELLOW onion (4 ounces; 113 g), in dice

  • 1 ounce (28 g) Fresh flat leaf parsley soft leaves and stems, roughly chopped (about 1/2 cup))

  • 1/2 ounce (15 g) costs dill fronds, almost chopped (about 1/2 cup))

  • 1 teaspoon dried thyme

  • 1 teaspoon Dried oregano or marjoram

  • 1 big egg

  • 1 teaspoon Crystal Diamond Salt Casher; For table salt, use half as much in volume

  • 1/2 teaspoon freshly black pepper

  • 3/4 cup versatile flour (3.3 ounces; 93 g))

  • 4 cups (960 ml)) Neutral oil for fryingLike Carthame, Sunflower or Avocado Oil (see Notes)

  • Simple whole soupel yogurt (Greek style) To serve, optional

  1. For the dough: Coarsely chop the 8 ounce tomatoes (about 2 tomatoes) and either gently pulsed in a mixer or a food processor until they are just combined or shredded on large grater holes based on a bowl, on the flesh side with the blades.

  2. Carefully chop any excess tomato skin after shredding. Transfer the grated tomato to a large bowl. DICE remaining 4 ounces of tomato (about 1 tomato) in 1/4 inch pieces and add to the bowl with grated tomato. (You should have about 1 1/2 cup of tomatoes.)

  3. Add the onion, feta, parsley, dill, thyme, dried oregano or marjoram, egg, salt and pepper to tomatoes and stir to combine. Use the back of a large spoon to divide the feta into pieces of the size of the blueberries. Start slowly to add 1/4 cup flour (30 g) at a time, until the donut dough is loose but not flowing, of consistency similar to a loose tuna salad. The dough should be sufficiently set to collect and rest on a spoon and barely keep its shape without falling, but not too thick or pasty. Cancel.

  4. To fry the donuts: Line a baking sheet on board with a double layer of paper towels and set aside. In a 10-inch cast iron pan or a Dutch oven, add oil (the oil must measure 1 to 1 1/2 inch deep) and heat to the medium-high until the oil records 350 ° F (175 ° C) on an instant or household thermometer. Once the oil reaches 350 ° F, the fire less than medium.   6. Use a slit spoon to transfer donuts, letting excess oil flow into the pan, with the prepared pastry plate. Sprinkle slightly with salt and let stand for at least 2 minutes to cool. Return the oil to 350 ° F (175 ° C), by adjusting the heat as needed and repeat the frying donuts in batch of 5 at a time. Let the last lot stand for 2 minutes after removing the oil, then serve immediately, accompanied on one side of yogurt to soak, if desired.

Notes

Choose an oil with a high smoke point. I recommend carthame, sunflower or avocado oil, because they are neutral flavor.

The sheep milk feta or the sheep milk feta with goat milk, wrapped in brine, best looks like the flavor of the Greek feta. The cow’s milk feta is generally dry and does not offer a comparatively creamy and Saumoise flavor.

Make-ahead and storage

Tomatoes, fresh herbs and onion can be cut up to 1 day in advance and stored in separate air -tight containers in the refrigerator.

The donuts are better served immediately, but the leftovers can be refrigerated in an airtight container up to 3 days. Reheat on a baking sheet with terminals bordered by parchment paper in an oven at 350 ° F (180 ° C) until recruitment and heated, 5 to 7 minutes.
