How to cook spaghetti squash

Spaghetti squash is such a fun and underestimated vegetable! Here is my favorite way to cook it, as well as some tips and recipes.





I receive so many questions about how to cook Spaghetti squash, so I thought of sharing my reference method for roasting, some tips and some of my favorite spaghetti squash recipes.

How to cook spaghetti squash

The first thing is the first: place the squash on a cutting board and use a sharp knife to cut it in half lengthwise.

If your squash is too difficult to cut, Softely soften it in the oven or in the microwave before slicing it in half.

  • Option 1: roast the whole squash. Prepare it with a fork and cook at 400 ° F for 10 minutes to make it easier to cut.

Then sprinkle the inside slightly with olive oil and sprinkle with salt and pepper. I find that adding too much oil and too much salt at this stage makes the squash a little aqueous, so a light net and a slight pinch will do the trick.

An error I made was roasting my squash for too long. I would roast it for an hour or more, but now I roast it for 30 to 40 minutes. I first thought that the squash had to be super soft and tender the fork so that the “spaghetti” strands, but over the years, I learned that I prefer that my strands are more alternative (and less pasty), and that the brand of an hour was too long. Of course, the timing will depend entirely on the size of your squash and the heat of your particular oven. It can also vary from one squash to another, so adjust your cooking time accordingly.

Once it is roasted and fresh enough to touch, use a fork to scrape the strands. I like to start from the outside and make my way, to mobilize them as you go.
