Frozen sesame noodles

These icy sesame noodles have become my best summer friend. Is it hot? If this is the case, there is a good chance that it is on the table. I am here to share the details before I get out of the summer. Imagine a rotary distribution of long slurp noodles (Soba, Pici, Somen, Spaghetti, etc.) entangling with a creamy sesame sauce, garnished with 4-5 easy toppings. This is the basic formula. Noodles are served in family style in a large bowl of ice water. Everyone mixes their own individual personalized portions. So good, so fun. Certainly a concept of Japanese inspiration, having fun, in our house, with everything that appears in the producer markets of California. I encourage you to integrate what your family loves and the ingredients that shine in your local markets.
Build a bowl of frozen sesame noodles
In addition to boiling noodles, almost everything else can be prepared in advance. This is part of what is great about this and what makes it a meal adapted to the week. I like to throw chopped vegetables (everything that is at hand – broccoli, asparagus, etc.) in pasta water after the noodles out, keeping the kitchen in a single pot. To summarize, here are the main components of the meal:
- Noodles: Keep a selection of favorites at hand.
- Homemade sesame sauce: Advance and refrigerate up to a week. Recipe below. Also remember to experiment with almond butter and / or peanut butter in place of Tahini or sesame paste for another variation.
- Filling: I will list more than twenty favorites. Choose 4-5 for your meal.
- Side vegetables: And an easy boost! As mentioned above, take something that can boost fast in your pasta water after removing the noodles. More ideas below.
Let’s talk about noodle options
I made fantastic versions of this meal with all the following elements. Think a long time and suspense on the noodle forehead. I also check my noodle labels to make sure they are not savagely Salted, to be honest, I was caught on several occasions.
- Soba: I love the combination of Soba Soba noodles and sesame and Soba traditionally works well with sesame sauces similar to that. The Soba is a common essential when I make this recipe and this cold soba, in general, is wonderful.
- Seat: These fine Japanese wheat noodles are a favorite that will appeal to the crowd. Especially if you have difficult eaters who are not as receptive to brown noodles.
- Homemade pici: Italian pasta rolled in hand, if you are ready for more than one project, Cold Pici really makes this situation more special.

Sesame noodle fillings
Choose 4 to 5 different fillings. I have the impression that grated ginger is a non -negotiable here. So good. And I leave any spicy component out of the basic sesame sauce so that each person can light up their bowls with the level of spicy they can manage.
- grated ginger: Peel the ginger with a spoon and grate with a microplane grater in a small bowl. Topping key!
- Something spicy: Favorites for this recipe include chili calabrienne oil, crisp chili, tobanjan
- Grilled and / or nuts: Za’atar, traditional Gomasio, I also make a red gomasio-ish (photo above) that I will publish the recipe for soon, grilled peanuts, etc.

- crunchy bits: For example, fried shallots or crisp jalapeño pieces (WB brought these TJs a few weeks ago)
- pesto: A small spoonful of pesto in your bowl with the sesame sauce is rather great.
- Lemon zest or chopped and preserved lemons

- Finely trenched and crisp apple
- Grilled pumpkin seeds
- Simple cauliflower
- Roast cauliflower: This variation is the next on my list, the icy sesame noodles plus roasted cauliflower and some of the other ingredients in this recipe in the form of garnishes-mint, arugula, chopped dates, red onion and flexible toasted pepper. It’s going to be good.
- Also! For the bowl of iced noodles (above), play. Add the slim citrus slices – Meyer Lemon, Rangpur Lime, Kishu Mandarin, Orange, Key Lime are all recent favorites. Broccoli Flotrets, asparagus highs, green beans, yellow beans, corn – these are just a few of the vegetables that I cooked in a flash after cooking noodles for the bowls. Boil for about one mint, filter under cold water and serve on the side. Everyone also likes to work vegetables in their noodle bowls.
