Grilled caesar salad with homemade vegetarian vinaigrette
I could eat Caesar salad for each meal. Instead of using giant croutons in this grilled version, I do toast to a panko that I had already at hand. The crispy panko clings to each piece of lettuce thanks to my addictive vegetarian Caesar vinaigrette (which can be made vegan if you use a vegan mayo!) And to keep the vinaigrette without fish, I replace the anchovies against seaweed sheets, which can be found in the aisle of snacks these days, even in Walmart! You always get a bit of this classic ocean flavor without fishing, if it’s not your thing.
This grilled caesar salad takes a little Additional effort than opening a bottle of vinaigrette in store and cutting regular Roman lettuce, but the grilled Roman is perfect for summer. You will have to trust me on this one !!

** You can find miso paste In many grocery stores; It just takes a little hunting. My Kroger guard it where they store the tofu. If you cannot find it where you can find it even cheaper in an international grocery store.
To make this vegan recipe: Use a vegan mayonnaise to make the vinaigrette, use vegan salted butter to grill the panko and leave the parmesan.
The vinaigrette in this recipe gives 2 ¼ cups in total. I use ¼ cup per portion, which means that the total amount is sufficient for 9 portions. How to take salad photos of the roasted Roman Caesar

Gather your ingredients and preheat your grill.

Gril the hearts of the Roman: Slice 2 heads of Roman lettuce in two, leaving the root intact but cut. Be sure to dry it very well after rinsing. Brush the cut sides of the Roman with oil (1 teaspoon of Total).

Sear the Roman on a very hot grill to get color, about 3 minutes in total. It will take more time for grill brands to form if your grill is not very hot.

Move the lettuce to the refrigerator to cool when you prepare the vinaigrette and the sides.

Toast the Pankko: Toast ¼ cup of Panko breadcrumbs in a saucepan with 1 tablespoon of salted butter and 1 teaspoon of olive oil.

When the panko is golden and toasted, remove it from the fire. This is what I use instead of traditional croutons in this grilled Caesar salad recipe! The grilled panko clings to the lettuce leaves, so everything is a texture party.

I just want to highlight the amount of cheese you can get when you grate it yourself! Just the point of this block of Parmesan gave 1 cup of grated parmesan (and you only need ½ cup in total for this recipe!). Quite budgetary (and no strange curator or anti-fabrication agent) compared to pre-râpée options.

Make the vinaigrette: Add 1 cup of mayonnaise, ¼ cup lemon juice, 2 large cloves of garlic (chopped), 1 tablespoon of soft white miso, 1 tablespoon of Dijon mustard, 1½ teaspoon of black pepper, ½ teaspoon of sea salt, 2 tsp. Tea Do not add the seaweed yet!

Now mix the ingredients of the vinaigrette until they are completely smooth.

Add the seaweed: Bring ½ packaging of seaweed leaves in the vinaigrette and mix to combine.

Assemble the salad: Recover your grilled Roman hearts from the refrigerator and sprinkle each corner with ¼ cup of vinaigrette each (you will Have remaining clothes for other salads!), Lots of grilled panko, any mixture of bagel (1 tablespoon in total) and the remaining packet algae leaves. Garnish with ½ cup of freshly grated parmesan and enjoy!

Suggestion service
Since you’ve already got the grill, you can get the most out of it! Transform this into a grilled chicken cesar by adding grilled chicken breasts, or try toasted tofu or grilled shrimp for something different. The Panko already adds an excellent crunch, but I bet that bacon cooked in the crumbled oven (or a vegetarian alternative) would be tasty added to the top. If you have marinated red onions that drag in the refrigerator, also throw them on your grilled caesar salad!
Storage instructions
The grilled Roman is better appreciated the day it is made because it will soften and withered more it is stored. The vegetarian Caesar vinaigrette, however, can be done in advance and maintained in an airtight container in the refrigerator up to 5-7 days. Give it before using it again.
