Fajita pasta with chopped chicken with cheese

All the flavors of chicken fajitas in a simple and tasty dough which is cooked in a saucepan and garnished with a lot of melted cheese!
ingredients
- 1 tablespoon of oil
- 1 chopped chicken book (or turkey or beef)
- 1 onion, sliced or dice
- 1 green pepper, sliced or dice
- 1 red pepper, sliced or dice
- 1 yellow pepper, sliced or dice
- 3 cloves of garlic, chopped
- 2 tablespoons of Taco seasoning (link)
- 2 1/2 chicken broth cup (link)
- 1 (15 ounce)
- 8 ounces pasta (gluten -free for gluten -free)
- 1/2 cup of sure cream (or Greek yogurt or thick cream) (optional)
- 2 cup of cheddar cheese (or monetary jack), shredded
- 2 tablespoons of coriander, chopped
instructions
- Heat the oil in a large skillet over medium heat, add the chicken and cook, breaking it while it cooks, about 10 minutes.
- Add the onion and peppers and cook until tender, about 10 minutes.
- Add the garlic and taco seasoning and cook until it is fragrant, about a minute.
- Add the broth, tomatoes and pasta, bring to a boil, reduce the heat and simmer until the pasta is tender, about 8 to 10 minutes.
- Mix the sure cream and half the cheese and let melt in the sauce.
- Sprinkle the remaining cheese and let melt. (Throw a lid and cook for 2-3 minutes or throw it under the grill.)
Option: Add 1 jalapeno pepper, dice, as well as the peppers.
Option: Add 1 poblano pepper, dice, as well as the peppers.
Option: Replace the diced tomatoes with 2 cups of salsa.
Option: Serve garnished with your favorite Fajita lining!
