How to make cucumber tomato salad

You can find the complete recipe at the bottom of this post, but for now, here is a quick overview of the way it happens:

Ingredients

This cucumber tomato salad begins with simple and fresh ingredients:

  • Tomatoes – Use the types of types at best on your producer market or your grocery store. I love to make this salad with heritage tomatoes, but cherry tomatoes, grape tomatoes or vine tomatoes work as well.
  • Cucumber – I usually do this salad with English cucumber. English cucumbers have small seeds and very thin skin, so I do not peel them or do not feel them for this salad. You can use any other variety you like, but if it has thicker skin or larger seeds, you may want to peel it and / or sow.
  • Onion – The red onion is my go-to, but the white onion also works.
  • Fresh herbs – Every type you like! I often reach fresh basil, mint, parsley and / or fresh dill, but oregano, coriander and thyme would also be charming.

Vinaigrette for tomato salad with cucumber

I complete the salad with a super simple vinaigrette Fresh lemon juice, red wine vinegar, olive oil, salt and pepper.

I love the combination of pointed vinegar and fresh and fresh lemon juice, but if you want to simplify the vinaigrette ingredients, you can use one or the other. Other vinegars would work well here too. All these types would be a good substitute for red wine vinegar:

  • distilled white vinegar
  • White wine vinegar
  • Sherry vinegar

How to make cucumber tomato salad

I have a big advice to make this salad: Cool it for 10 minutes before adding the oil and herbs.

This is because cucumbers and tomatoes contain a lot of water, which can dilute the flavors of this salad.

To get rid of part of this excess water, I first throw the cucumbers, tomatoes and onions with lemon juice, vinegar, salt and pepper. Then I cool the mixture for 10 minutes.

Just before serving, I transfer the vegetables to a fresh bowl, leaving the juice behind. Finally, I throw them with olive oil and herbs and season with taste.
