Cinnamon cinnamon muffins with coconut flour (cereal without cereals)

I discovered this recipe for cinnamon muffins with apple without cereals made with an apple compote from despair. (Isn’t it as true that the necessity is the mother of the invention?)
This special morning, I realized that I only had five eggs in the refrigerator – not even close enough to feed us all. Especially when each child could easily eat three each! I had coconut flour, homemade apple compote and coconut oil, so I mixed them and … that’s it!
The children asked them every day at breakfast for a week in a row, and a delicious Go-To Breakfast recipe (and also “to take away”) was born!
Best apple cinnamon muffins: a break from the standard
I will be real here … I have not always been a big baker, which, I suppose, makes sense, since we do not often eat grains. However, being without cereals can mean a lot of scrambled eggs for breakfast, and we have all these days when only pastries will do the trick. Even now that my hashimoto have left and eat grains (and even gluten!), I always appreciate bakery products of coconut flour.
It’s always good to do things well and hit a recipe that makes mom and children happy. These remind me of the apple pie, but in a muffin version.
If you have never had coconut flour muffins before, know that they are a little smaller and dense than your typical muffin. However, they have this brilliant texture and aroma with an apple flavor. They are full of protein and fibers, and they are gluten -free and cereal. Not to mention all the great advantages for the health of coconut, as these muffins use both coconut flour and coconut oil.

Apple cinnamon… or whatever flavor you want!
I chose this combo of apples and cinnamon compote for convenience, but these muffins are incredibly versatile. I even discovered that with a few simple modifications, I could transform this recipe into pancakes with apple with cinnamon coconut flour!
Using the recipe for muffins or pancakes as a base, try these mixtures to change things:

Reduce the ¼ cup potatoes compote and add a too ripe banana before mixing

Incorporate ½ cup of grilled chopped nuts, like nuts

Mix ½ cup of fresh or frozen blueberries or raspberries

Add ½ cup minced apple for an additional texture

Add 3 tablespoons of cocoa powder to do almost cupcake muffins

Garnish with grated coconut before cooking for an additional crunch
- Skip the apple and do them orange cranberry Or Lemon blueberry muffins!
Coconut flour coconuts with apple cinnamon
Hearty breakfast muffins that can be personalized to your specific tastes.

Preheat the oven to 400 ° F.

Grease a muffin pan with coconut oil or use silicone muffin cups or paper lining

In a large bowl, mix the eggs, apple compote, coconut flour, cinnamon, nutmeg, ginger, baking soda, baking powder, salt, vanilla, melted coconut oil or melted butter, honey and milk to smooth consistency. Let the muffin dough rest for 5 minutes to allow coconut flour to absorb moisture.

Use a 1/3 cup measure to collect the dough in muffin cups.

Bake for 12-15 minutes, until the summits are golden brown and to come out when they are slightly affected.

Leave to cool for 2 minutes, then sprinkle the top of the muffins with additional honey if you wish.

Take advantage of a warm or storage in an airtight container up to 3 days.

If you often need breakfast, try to make a lot of these and freeze them. Déagel on the counter during the night before eating.
Try adding pieces of apple or apple cut into diced to further increase the apple flavor. Fresh apples add more texture. If you like a tangy bite, opt for Granny Smith Apples. The pink lady or the hop offer a softer flavor, or simply use what is your favorite!
