BBQ Chicken and Mexican Street Corn Salad stuffed sweet potatoes

Soft stuffed potatoes are always fun and these with barbecue chicken, melted cheese and a Mexican cornstado salad are the ideal way to enjoy fresh summer corn! This recipe begins with the cooking of sweet potatoes before cutting them and crushing the flesh. The BBQ chicken is stuffed followed by a cheese that is melted. While the sweet potatoes roast, you can make the corn salad by displaying the corn in a pan with butter before mixing the jalapen, green onion, coriander, mayonnaise, lime juice, cayenne, salt and pepper!
