Cilantro Cilie Pouleur and Rice Soup

A light and tasty chicken soup and rice with coriander and lime!

ingredients
  • 1 tablespoon of oil
  • 1 cup of onion, in dice
  • 1 cup of carrot, dice
  • 1 red pepper, dice
  • 1 tablespoon of garlic, grated / chopped
  • 1 tablespoon of ginger, grated / chopped
  • 1/2 teaspoon of turmeric (optional)
  • 1/4 teaspoon of Cayenne (optional)
  • 6 cups of chicken broth
  • 1 (14 ounce) can coconut milk (or 2 cups of chicken broth)
  • 1 Book breasts or boneless and skinless chicken
  • 1 cup of jasmine rice (or other long grain rice)
  • 1 lime, juice and zest
  • 1 tablespoon of fish sauce (or soy sauce)
  • 1/4 cup of coriander, chopped
  • 2 green onions, in thin slices
instructions
  1. Heat the oil in a large saucepan over medium heat, add the onion, carrot and pepper and cook until tender, about 10 minutes.
  2. Add the garlic, ginger, turmeric and cayenne and cook until they are flavored, about a minute.
  3. Add the broth, coconut milk and chicken, bring to a boil, reduce the heat and simmer until the chicken is cooked, about 20-30 minutes, before removing the chicken and cutting it or shredding it.
  4. Add the rice and chicken, bring to a boil, reduce the heat and simmer until the rice is tender, about 20 minutes.
  5. Add the lime juice and zest, fish sauce, coriander and green onions and enjoy it!

Option: Add 1 cup of celery, diced with onions and carrots.
Option: Add 1 jalapeno, diced, as well as onions and carrots.
Option: Add 1 teaspoon of poultry seasoning.
Option: Add 1 cup of peas (fresh or frozen)
Option: Add a touch of spicy sauce.
Option: Serve fitted with Nam Prik Pao (chili roasted in oil).
Option: Replace the rice with noodles, reducing the cooking time to about 10 minutes, or until the noodles are tender.
Option: Add 1 tablespoon of coconut / palm sugar, or brown sugar or white sugar. (To balance lime assistance.)
