Polish noodles and cottage cheese

Simple and tasty Polish-style noodles and cottage cheese, aka lazy pierogies.
ingredients
- 6 ounces egg noodles (gluten-free for gluten-free)
- 6 ounces bacon, cut into 1-inch pieces (optional)
- 1 small onion, diced
- 1 cup cottage cheese
- 1/2 cup sour cream
- salt and pepper to taste
instructions
- Start cooking the pasta as directed.
- Meanwhile, cook the bacon and set aside on paper towels to drain, reserving the fat in the pan.
- Cook onion in bacon fat in skillet until soft, about 5 minutes.
- Mix the cooked pasta in the onions with the bacon, sour cream, cottage cheese, salt and pepper and enjoy!
Option: If you omit the bacon, brown the onions in 4 tablespoons of butter.
Option: Add 2 chopped garlic cloves, cook the onions after cooking.
Option: Add 1 tablespoon of chopped parsley at the end.
Note: It’s good warm or fresh!
