Simple and tasty Polish-style noodles and cottage cheese, aka lazy pierogies.

ingredients
  • 6 ounces egg noodles (gluten-free for gluten-free)
  • 6 ounces bacon, cut into 1-inch pieces (optional)
  • 1 small onion, diced
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • salt and pepper to taste
instructions
  1. Start cooking the pasta as directed.
  2. Meanwhile, cook the bacon and set aside on paper towels to drain, reserving the fat in the pan.
  3. Cook onion in bacon fat in skillet until soft, about 5 minutes.
  4. Mix the cooked pasta in the onions with the bacon, sour cream, cottage cheese, salt and pepper and enjoy!

Option: If you omit the bacon, brown the onions in 4 tablespoons of butter.
Option: Add 2 chopped garlic cloves, cook the onions after cooking.
Option: Add 1 tablespoon of chopped parsley at the end.
Note: It’s good warm or fresh!
