Why it works

Since I saw Steve Martin and Bernadette Peters have shared a Swhasted o ‘pizza cup LessonI have been convinced that most foods improve when you erase them first. This conviction has perfectly started me for the Frit Schashed Sambal chicken, which I saw for the first time on an Instagram coil – a rare moment of instant membership for me, since my usual response to the food content of social media is instinctive skepticism.
The Instagram coil came from an Australian restaurant that made its own creative turn on Ayam Geprek, Indonesian street food in crisp chicken sprayed with sambal. “Pulverized with sambal” summarizes the whole concept – and all the disarticulated potential it promises: you take boneless fried chicken, then you Crush it with sauce. That’s it. The sauce can be sambal, of course, but it can also be crisp in Chile, or anything you can dream. It is difficult to think of what condiment would not be good about it.
One thing that I absolutely like in this dish is that, even if, yes, you can do it from scratch with homemade fried chicken and sambs, it is the perfect upgrade of your favorite fast fried chicken. Just buy fried chicken, bring it home and crush it in a bowl or mortar and a pestle with all the condiments you have in the refrigerator or the pantry. Stack it on fresh rice, maybe throw into leafy things on the side for your daily dose of vegetable fibers, and you have a meal as delicious as it is fast. No – more delicious than quickly, because it is so delicious that it is delicious that the three minutes needed to crush it.
