I don’t eat a lot of chicken salad, but when I do it, it’s Costco. It is so tender, creamy and perfectly seasoned that I find it hard not to eat everything (which is probably supposed to serve at least Four people) in a single session. But there are times when I cannot arrive at Costco and that desperate times call for desperate measures. For some, desperate could mean placing an instacart order to have the chicken salad delivered (I promise that I haven’t done that … But for me, it means taking things in hand and doing a big bowl of good things myself.
At the heart of a large chicken salad is juicy and tender meat. The best way we have found to get there is to cook your chicken subvid. By adding aromatics such as lemon and herbs to vacuum bags, you can also infuse the chicken with a better flavor. But the roasted chicken remains will also work for these preparations, that you make our classic chicken salad (which could be better than the Costco version), or one of our many variations.
